Fresh milk from Friesian cows and traditional maturing
We are now heading to the Pyrenees, specifically to the regions of Alt Urgell and Cerdanya. This is where the Alt Urgell and Cerdanya DOP cheeses are made from fresh Friesian cow's milk. We recognise them by their tender and creamy texture, as well as their mild and balanced flavour. Their traditional maturing process favours the development of aromas with notes of dried fruit, moss and mushrooms.
